White Bean Chicken Chili
3 boneless chicken breasts
2 tablespoons oil
2 cans white beans
4 cups chicken broth
1 1/2 onions chopped
4 garlic cloves, minced
2 4oz cans green chilies
1 1/2 cups water
1 tablespoon cumin
Heat oil in a skillet, add chicken and coat with salt and pepper on each side. While chicken is cooking add beans and broth in a large pan over medium heat, covered.
Remove cooked chicken and blend on low speed to shred, leave in blender for a few minutes while you add onion and garlic to pan you cooked chicken in. Cook until softened, about 5 minutes.
Add onion mixture, shredded chicken, chilies, water, and cumin to the beans and broth.
Cook over medium heat covered for about 30 minutes, stirring frequently.
Scoop into individual bowls and add cheese, crackers, sour cream or any topping to your desire.
