Baked Potato Soup

Yummy yummy Baked Potato Soup

2/3 Potatoes, washed really good 
1 head of cauliflower, remove stem and cut into pieces
1 can Chicken broth 
1 1/2 cups Milk
Salt and Pepper
3/4 cup Sour Cream
1/2 shredded cheddar cheese 
2 green onions 
4 Tablespoon fresh chives
4 slices of bacon (cooked and crumbled)

Microwave potatoes on high for approximately 5 minute and then turn over and microwave an additional 4/5 minutes.

While microwaving potatoes steam cauliflower on medium heat in a large covered pot until tender. Drain and return to pot. Add chicken broth, milk, potatoes (peeled), green onions and chives.  Bring to a boil.   While in the pot use a blender to blend until smooth and then add sour cream and salt and pepper and  cook for an additional 10 - 15 minutes.  Stir occasionally. 

Remove from heat and scoop onto bowl adding Cheese, chives, and bacon over the top.  Also add more sour cream and season to taste.
